Updates all references from mosaicstack/mosaic-stack to mosaicstack/stack following the Gitea repo rename.

Changes

  • Install script curl URLs (Quick Install section and Upgrading section)
  • Git clone URL in Development setup
  • Architecture tree root directory label (mosaic-stack/ → stack/)

No content additions — accuracy/cleanup pass only.
